You will need:

  1. Coconut oil: 2 tbsp.
  2. Yellow onion: 1 (chopped)
  3. Unpeeled, chopped carrots: 6 cups
  4. Full fat coconut milk: 15 ounces
  5. Vegetable stock: 3 ½ cup
  6. Fresh ginger root (chopped): 1 tbsp.
  7. Red pepper flakes
  8. Salt
  9. Pepper

Pesto:

  1. Garlic clove: 1
  2. Packed cilantro: 1 cup
  3. Olive oil: ¼ cup
  4. Freshly squeezed lemon juice: 1 tbsp.
  5. Salt
  6. Pepper

Method:

  1. Take a small skillet and heat it on medium
  2. Add the coconut oil to this skillet and let it melt.
  3. Now add the onions and sauté them until they are golden brown.
  4. Now, put them in a high speed blender.
  5. Add all the other ingredients to the blender as well and blend so that they are all smooth. This will take about 7 minutes.
  6. You can make the pesto, on the other hand, in a small processor. Make sure it is almost smooth.
  7. Now pour the soup into bowls and garnish with the pesto.
