Mango custard makes for the perfect dessert post dinner. It is light, delicious, and super simple to whip up. If you have access to ripe mangoes, this one is a must try.
Here’s how you make it:
You will need 250 grams of fresh, ripe mango pulp, half cup chopped mango, 1 tbsp. corn starch, ½ tsp. vanilla extract, 500ml milk, 500ml fresh cream, yellow food colouring, and sugar to taste.
Start off by combining the corn starch with 100 ml milk and stir it till smooth. Boil the remaining milk over medium heat. Next, add the corn flour slurry and food colouring to the milk bit by bit while continuously stirring the milk to ensure no lumps form. Now add the vanilla extract and sugar and take it off the heat. Fold in the mango puree and cream. Fill tall glasses with the mixture, and refrigerate for about 4 hours. Garnish with fresh cut mangoes and serve chilled.
PS: You can replace mangoes with bananas, custard apples, or mud apples and the results will be just as wonderful.
